Towards the end of September before we start harvestingthe white grapes, the best bunches of Trebbiano andMalvasia are picked and taken to the vinsantaia, a specialloft where the vinsanto is made. Here the bunches of grapesare hung from long chains and the windows thrown opento ensure that the air circulates at all times. Thanks toVolpaias microclimate, characterized by cold dry winters,the grapes are left to dry until February. by which timethey have reached the concentration required to guaranteethat the Vinsanto will have a high alcohol content and theright amount of residual sugar. The dry grapes are pressedand, after a natural process of clarification, the must ispoured into the traditional small oak casks which stillcontain the lees of the Vinsanto which has just beenremoved from them.
